Dyan's Recipes with Beer
Beer Con Queso Dip
1 Bottle (12 oz) beer (not dark)
1 Cup grated sharp cheddar
1 Cup grated
1 Cup grated monterrey jack cheese
1 Cup grated colby cheese
2 tablespoons all-purpose
1 small onion, minced fine
1 tablespoon unsalted butter
˝ Cup tomatoes, chopped fine
peppers to taste (start with one)
Directions and notes:
In a bowl, toss the cheeses with the flour and reserve the mixture. In
a large heavy saucepan, sauté the onion in butter over low heat, stirring until it is softened and clear (do not
burn), add the beer, the tomatoes, and the jalapeno peppers. Simmer the mixture for 5 minutes. Add the reserved
cheese mixture by ˝ cupfuls to the beer mixture, stirring after each addition until the cheeses are melted. Serve
the dip with the tortilla chips. Enjoy!
