The Legend of Brewer's Cave
In 1855. upon discovering pristine natural springs and an abundance
of cool, underground caves in St Paul, Minnesota, a young Bavarian brewer named Christopher Stahlmann built
the legendary Cave Brewery. To achieve the wonderfully subtle and complex taste of his brews, Stahlmann's
brewing process included hand-selecting the very finest malt, barley and hops...roasting them in special ovens
and to transform them into a variety of beer styles and tastes. The overwhelming demand for his been
forced Stahlmann to develop a system of brewing caves that were three levels deep and a mile wide which
still exist beneath St Paul, MN today.
By 1880 Minnesota ranked fith in the nation in beer production,
with 112 breweries. St. Paul, with 12 breweries, was the hub of regional brewing activity, led by Stahlmann
Cave Brewery, which grew to become the state's largest brewer in the late 1800s. A favorite not only in Minnesota,
but in neighboring states as well. Although we no longer use the caves to age our been, we carry on the time-honored
brewing traditions Christopher Stahlmann established for the Cave Brewery over a century ago. The water today
comes from the crystal clear spring waters bubbling up in Cold Spring, MN. The natural spring waters discovered
in 1874 requires no additional filtration and is considered by some to be the most purified water in Minnesota.
Minnesota has the ideal natural brewing resources, climate and
soil suited for growing barley, ample fresh water supply; and cool, natural caves available for aging German
Lager-Style Beer and the freshest ingredients in the New World. This attracted "Old World Brewers"
like Christopher Stahlmann to Minnesota. The same assets are valued by our Head Brewmaster, Sig Plagens. German-born
and trained in the art of European brewing just as the brewing pioneers that preceded him. In honor of Christopher
Stahlmann's cave-brewing legacy, we offer our handcrafted specialty beers from the land of blue diamonds at
Brewers Cave. The intensity, personal attention and expertise demanded of traditional cave-brewers are proudly
built into every brew that is now produced at Brewer's Cave Brewery. Christopher Stahlmann would not
have it any other nor would Sig Plagens!
Brewer's Cave Roasted Black Barley Ale's story begins with a
handcrafted mixture of Barley, Caramel, Carapils, Roasted Barley, Black Barley Malt , and Cascade and Brewers
